Healthy Chicken Fried Rice

Makes two servings
  • 1 cup of fresh cut Peppers
  • 1 cup cut Carrots 
  • 1 cup Snow peas 
  • 3/4 cups Broccoli
  • 1/2 cup of Frozen peas
  • 1 1/2 cups of LEFTOVER cooked Brown Rice (this should be cooked on a different day)
  •  1 Chicken Breast 
  • 1 Egg
  • Olive Oil
  • 2 Tblsp Low Sodium Soy Sauce
Directions: Cut chicken breast into bite size pieces. Cook chicken breast in hot pan (medium/high) with 1 tsp olive oil. Once chicken is cooked through add all fresh vegetables. Cook desired time. Add leftover brown rice. Stir until heated through. Make a spot in the middle of the pan, add 1 tsp of olive oil into spot then place the egg and stir thoroughly. Stir in low sodium soy sauce. Then ready to serve.  ​

I think the size of chicken breasts has changed dramatically since Julia Child's day, which could account for some of her shorter cook time.

What an awesome idea. I buy ground beef and chicken in 5lb bulk bags and have always divided it up ready to cook and stored in the freezer, but pre-cooking would save so much more time. Have you found that the cooked/reheated meat does or doesn’t absorb your spices as well? That would be my only concern, although I think you could avoid the bland meat scenario by putting some garlic, salt, pepper and some other “general” seasonings (parsley, minced onion) in there when you cook in the crock pot. I would think these are common enough to most things you do with the finished meat that you wouldn’t endanger the final dinner product.

hanks! My fiancé is an amazing cook but me, not so much! I made this today for dinner so he didn’t have to cook. It was great! Easy enough for this inexperienced cook and tasty enough for his experienced taste buds! I added A super reduced balasmic on top since we use it for Caprese salad and it baked onto The chicken really well. This recipe is a keeper! Any idea for a balsamic Like sauce to go with it?
