This has slipped out of my rotation, and its the perfect time of year to put it back on the food plan! I definitely fit into the category of a lazy, healthy cook or one might say very motivated by less time spent in the kitchen hahaha! So if you're anything like me, you might want to make extra and after you cook and cool them put them in the freezer for a quick meal ready to go short notice.
Ingredients for pumpkin pancakes:
Like I said before, I like EASY and HEALTHY in equal parts for me ;)
Blend together in a blender or food processor all the ingredients well (except baking powder). Then I add baking powder and mix. Cook on the griddle. TIP: Make sure the batter is spread thin on the griddle so the pancake cooks through.
